THE GEOGRAPHY OF FLAVOUR

Mapping the 1,000m+ Terroir of the Pacific’s Tea Island.

An Island Defined by Verticality

Taiwan is a land of extremes. Its central mountain range rises sharply from the sea, creating a unique microclimate where tropical warmth meets alpine chill. This ‘High Mountain’ (Gao Shan) environment is the only place on earth where Oolong reaches this specific level of aromatic complexity. At Haze & Heights, we only source from gardens located in this ‘Goldilocks Zone’ above 1,000 meters.

ALISHAN (1,200m – 1,600m)

THE MIST GARDENS

Alishan is world-renowned for its persistent fog. This natural ‘Haze’ slows photosynthesis, resulting in a leaf rich in L-theanine and a cup defined by creamy, floral sweetness.

SHAN LIN XI (1,600m – 1,800m)

THE CEDAR FORESTS

Surrounded by ancient coniferous forests, the tea here absorbs a distinct ‘forest breath’ (Shan Yun). Expect a crisp, clean profile with notes of pine and cool minerals.

LISHAN (2,000m – 2,600m)

THE PINNACLE PEAKS

Lishan is one of the highest tea-growing regions in the world. The extreme cold and thin air produce a rare, concentrated nectar with a lingering, fruit-like finish.

Why Elevation Matters

The Mist: Shields leaves from bittering tannins.

The Soil: Mineral-rich volcanic earth provides “structure” to the taste.

The Temperature: Cold nights force the plant to store more sugar, creating a naturally sweet brew.
