THE CONNOISSEUR’S RITUAL
For those seeking the full spectrum of the leaf. Using a Gaiwan(蓋碗) or small clay pot, we recommend multiple short infusions. This ‘Gongfu’ (功夫) style allows the tightly rolled Oolong pearls to unfurl slowly, revealing different aromatic layers with every steep.

THE PROFESSIONAL SERVICE
Designed for hospitality and clinical environments. This method prioritises consistency and elegance. By using a larger glass or ceramic carafe and a single, longer steep, you achieve a balanced, honey-like liquor that remains stable from the first sip to the last

THE HEAT (85oC – 95oC)
Never use boiling water. Soften the temperature to preserve the delicate floral oils of the High-Mountain leaf.
THE TIMING (45s – 3m).
Short bursts for complexity; longer rests for body. High-altitude Oolong is forgiving and rarely turns bitter.
THE MATERIAL
Porcelain or glass is preferred. These neutral materials allow the ‘Mountain Breath’ of the tea to shine without interference.
For the Mind and Body
To maximize the release of L-theanine and antioxidants, we recommend a ‘Rinse’—pour hot water over the leaves for 5 seconds and discard. This awakens the leaf. The subsequent ‘First Infusion’ is where the therapeutic clarity begins.
